Roti Canai Curry Sauce



Ingredients

1 pc Potatoes, dice
1/2 can Coconut Cream
1 pc Onion, chopped
1 tsp Curry Powder
1 pc Star Anise
1 pc Clove
1 cm Cinnamon Stick
1 tsp Chili Powder
1 tbsp Cooking oil1
1 cup Vegetable stock

Method:

Heat up the cooking oil and stir-fry onion until soft. Add in curry powder, cinnamon stick, clove, star anise and chili powder, and fry for 30 second. Add potato into the curry mixture and stir-fry for further 2 minute. Add the stock and simmer for 30 minute or until potato is cook. Lastly add coconut cream and bring it to boil. Heat up fry pan and cook roti canai each side until golden brown. Serve with vegetarian curry sauce as dip.

    I added a few more ingredients and i must say it tasted very nice!
    I added some lime juice, salt, cilantro, replaced the coconut cream with coconut water and coconut milk (mixed 1:1).

    In another attempt i even added some chicken and replaced the vegetable broth with chicken broth. I guess it completely changes the traditional recipe, but boy did it taste good!

  3. Jomeldelacruz, you make one heck of a sauce. Thank you for the hook up. I have more or less turned your recipe into a soup by adding mushroom and more potato. I also took the advice of Udai and threw in the lime and salt and replaced the coconut cream with coconut milk. I have probably used your recipe about 6 times already. You can come to my house and cook any time you want! Thank you!

    Thank you soooooo much!!!! :) because you liked this simple recipe more than I do, I always wanted to eat Roti Canai with this Curry dip and it's really hard for me to do it, because I can only try this whenever I visit Sabah Malaysia,

    Udai- actually you can also add potatoes if you want to, and about your additions and modifications, lemme try that too to give some other kick! thanks again!

  9. Hi... where you say 1 clove in the ingredients is this a clove of garlic or an actual clove? I'm new to cooking curry so I really haven't got a clue!! Thanks.

  10. Dear Anonymous - i think that if he meant garic he would probably have written garlic rather than clove so as to not confuse someone that is new to cooking.
    however when he said a 1 tsp curry powder i think he was trying to confuse you - he really meant 1kg sugar
